KADAI :

A kadai is a not-too-shallow, not-too-deep frying pan made of various metals and alloys, the most common being iron, stainless steel, aluminum and brass. Most of the kadhais have lids or other safety mechanism to reduce the risk of spitting oil.

These days there are plenty of non-stick varieties available, which make it scratch resistant, preventing it from scratching or peeling.
