HANDI :

Handis are made of brass with the cooking surface coated with tin, having a neck which is narrower than the base.

The cooking is done at the bottom of the pan to prevent the food from sticking or burning, with the lid helping in retaining the aroma of the food. ‘Bhunao’ and ‘Dum’ are forms of Indian origin handi cooking.
